I’ve been trying to eat a lot of protein and it’s been…a challenge.
Like I mentioned in my last fitness post, I’ve been working with a trainer and we calculated how much protein I need to eat daily. In my pre-trainer days, I thought that eating vegetables and cutting carbs would be good enough to lose weight. I was wrong. Eating protein is essential to build muscle and burn fat!

There’s only so much chicken I can eat in a day, so I gotta find ways to creatively add more protein into my diet. Especially on days I workout, I’ve been LOVING this recipe using Vital Proteins, which has collagen (a great anti-aging supplement) and helps with muscle building and recovery. The pancakes are so easy to make – I just chuck everything in my blender and the batter is made in less than a minute. It satisfies my sweet tooth whenever I crave for pancakes and I don’t feel guilty about eating it since it’s low carb and high in protein. Did I mention how crazy easy it is!?
Anyway, onto the recipe!
LOW-CARB BLENDER BANANA PROTEIN PANCAKES
Makes ~10 small pancakes
<300 calories, ~25 g protein
- 1 medium ripe banana
- 1 scoop vanilla protein powder, like Vital Proteins Collagen Whey
- 2 eggs
- Pinch of salt
- Cinnamon (optional)
- Nuts (optional)
- Maple syrup (optional)
- Coconut oil spray
Place the banana, eggs, salt, Vital Proteins Collagen Whey, and cinnamon (optional) into a blender until you get a pancake-like batter. Depending on the size of the banana, you may have to adjust the amount of protein powder needed.
Heat skillet to medium-low heat and once heated, spray coconut oil, pour batter immediately, and make pancakes ~3 inches in width. Flip the pancakes once it starts to bubble around the edges and keep a close eye to make sure the pancakes don’t burn. Coconut oil burns easily, so spray coconut oil right before you add new batter to the pan and the fresh light spray of oil will cook the pancakes evenly.
Serve immediately and sprinkle with fruit, nuts, and maple syrup.

How delicious! One of my friends was talking about a similar recipe where she added banana too, I could only imagine how they looked but if they look like these ones then I’m in! <3
